Too Many Cooks

Thai-inspired flavors brighten up winter

Brighten things up a bit this winter with a Thai-inspired layered salad that packs a little punch – and crunch.

This month’s “In the Kitchen with … ” feature spotlights a recipe from West Valley High School culinary arts teacher Lesley Dalke. It’s usually part of her springtime syllabus, and it helps her illustrate the importance of healthful eating.

Dalke often shares her own story with her students. She lost 160 pounds about a dozen years ago and has kept the weight off. She shares that struggle as well as recipes and class goings-on through her “Cooking in the Classroom” blog. It can be found at lesleydalke.blogspot.com.

Also in Wednesday’s Food section, look for a book review on fermented vegetables, plus a few recipes from it.

And, as always, Fresh Sheet features a few food-related tidbits, including the upcoming Spokane visit from celebrity chef Alton Brown. (A longer story by Spokesman-Review features editor Carolyn Lamberson is coming Friday in the weekly Spokane7 arts and entertainment section.)
