Jairus Crumley, Yoke’s Fresh Market assistant store manager in Mead, dumps a bag of crackers onto a pile of display candy in the store’s composting bin. In about three months’ time, Yoke’s program has gathered 70 tons of food waste from seven stores. Also on his cart are castoffs from the produce department.
