Veteran coffee roaster Tom Sawyer pours a measured amount of cold coffee concentrate into a glass of ice to make an iced coffee drink Wednesday, Aug. 3, 2011. He believes he has perfected the recipe and technique for iced coffee, which starts wth smooth Sumatran coffee steeped in cold water overnight, then filtered as a concentrate into a carafe and later combined with a variety of combinations of milk, water and flavorings to produce a smooth summer drink with none of the bitterness of hot-brewed coffees.
