Carl Naccarato starts by making an X-cut in raw chestnuts before roasting at Cassano's Italian Grocery at Mission and Napa in Spokane Friday, Dec. 16, 2011. The chestnuts are then easy to roast, without exploding, and eaten right out of the shell.
