Share Christmas Spirit With Less Fortunate

Most of us have any number of canned foods in our kitchen cupboards, from beans to soups to vegetables. And when mealtime rolls around, we open the cupboards and announce: “There’s nothing for dinner.”

Off we trot to the grocery store, checkbook in hand, for food. Heating a can of soup is not our idea of an adequate dinner.

For some people in this area, that can of soup may be all they have for their evening meal. And, holiday season or not, they are grateful for the food they do have.

But it is the holiday season. And all people, just like you and me, want to celebrate with something a little special.

You can help someone put food on their table this holiday season by making a donation to The Spokesman-Review Christmas Fund. It’s not too late, and your contribution can become as much a family tradition as serving turkey for Christmas.

It’s an opportunity to put some food on another’s table and a toy under the tree for their little ones. Give thanks for what you have and give to others, whose holiday meal will be blessed because of you.

Easy Salisbury Steak

Adapted from “Pepperidge Farm Easy Meals for Busy Days” (Meredith Publishing Services).

1-1/2 pounds lean ground beef

1/2 cup stuffing mix, crushed

1 teaspoon onion powder

1 egg, beaten

1 (12 ounces) canned beef gravy

4 ounces packaged sliced mushrooms

Mix beef, stuffing, onion powder and egg thoroughly. Shape firmly into 6 patties, 1/2 inch thick.

In large skillet over medium-high heat, heat oil. Add patties and cook 10 minutes or until browned. Set patties aside. Pour off fat.

Add gravy and mushrooms to skillet. Heat to a boil. Return patties to pan. Reduce heat to low. Cover and cook 5 minutes or until patties are no longer pink.

Yield: 4-6 servings.
