Some say Chicken-n-More, the modest little lunch stand in downtown Spokane, has the best fried chicken in town.
But this week’s Food Find isn’t about chicken. It’s about catfish. Chicken-n-More owner Bob Hemphill’s catfish sandwich is the essence of simplicity: a frozen filet, deep-fried in a special breading, served on a hamburger bun. The result is a deeply satisfying combination of distinct flavors and textures: the searing hot, yet mild, fish; the crisp coating; the doughy, bland bun; a touch of sweetness from ketchup, and a pleasant burn from the hot chili sauce.
