Pumpkin Chowder Will Warm Crisp Evening

Warm up on a cool evening with a bowl of pumpkin chicken chowder. It’s a reduced-fat dish made with solid pack pumpkin and fat-free chicken broth. Each serving contains 170 calories and 3 grams of fat.

Pumpkin Chicken Chowder Recipe from Libby’s Solid Pack Pumpkin

1 tablespoon vegetable oil

8 ounces boneless, skinless chicken breasts, cut into bite-size pieces

1 cup chopped onion

1 cup chopped red bell pepper

1 clove garlic, minced

3-1/2 cups (two 14-1/2-ounce cans) fat-free chicken broth

1-3/4 cups (16-ounce can) solid pack pumpkin

1/2 cup frozen whole kernel corn

1/4 cup long-grain white rice

1/2 teaspoon dried basil leaves, crushed

1/4 teaspoon salt

1/8 teaspoon ground black pepper

Heat oil in large, heavy saucepan over medium heat. Add chicken, onion, bell pepper and garlic. Saute until chicken is no longer pink.

Stir in broth, pumpkin, corn, rice, basil, salt and pepper. Bring mixture to a boil; cover. Reduce heat; simmer for 20 minutes, stirring occasionally until rice is tender. Serve warm.

Yield: 6 cups.
