Tips For Buying And Using Tortillas
Here are some tortilla tips from Marilyn Tausend of Gig Harbor, Wash., who writes Mexican cookbooks:
Lighter-colored corn tortillas taste best.
Buy tortillas made without preservatives.
To freeze tortillas, double-wrap them in plastic before placing in the freezer.
Dried-out tortillas can still be used. Cut them into strips and fry or bake them for use as chips. Or make chilaquiles, Tausend’s way: Fry the dried and broken-up tortillas and add them to a pan with salsa, chopped onions, tomatoes and chili peppers, plus a little broth or other liquid, and cook on top of the stove for about 5 minutes.
