Sandwich Shop Opening Soon At New Retail Center On Pines

Spokane’s third High Nooner specialty sandwich restaurant will be opening soon in the Valley.

The restaurant, which will be in a new shopping strip at the corner of Pines and Alki, will employ between 12 and 14 people, said owner Don Rickel.

The 2,100-square-foot restaurant was slated to open Oct. 1. However, Baker Construction of Spokane, which is building the 10,250-square-foot retail center, is a few weeks behind schedule. The building will be ready to open on Nov. 1.

Rickel said the gourmet sandwiches and salads he serves up will “knock your socks off,” especially the Sundowner sandwich made of turkey breast, herbed stuffing and cranberries and the Chicken Bowtie Salad that’s filled with chunks of chicken and bowtie pasta with hints of onion and garlic seasoning in the High Nooner’s secret sauce.

Meals at the restaurant cost, on average, around $5, Rickel said.

There are High Nooner outlets in the Northpointe shopping center and downtown. Rickel said he and his wife, Judy, plan to open three more of their restaurants in the area.

“I want to do six of them and stop,” he said. “But my wife says ‘Let’s not stop at six,’ but we will.”

The retail strip is being built to accommodate as many as five shops, Baker Construction spokesman George Garber said. But there might be fewer shops if an individual tenant requires an especially large space, he said.

Meineke Discount Mufflers, which is the only other tenant to sign on so far, will take up 4,200 square feet.

Firms form partnership

Certified Appraisal of Spokane has formed a partnership with Housemaster Home Inspections in order to provide expanded services to the clients of both firms.

The two companies are located in the same building at 12315 E. Trent. The names of the companies will remain the same.

“We’ve really simplified the process for people who need our services,” said Certified Appraisal’s president, Tony Higley. “Each partner contributes something unique to this alliance that could not have easily been developed separately.”

Certified Appraisal does real estate appraisals. Housemaster is licensed to perform termite inspections, and radon gas and lead-based paint testing.

Housemaster is owned by Spokane Valley native Casey Parsons, a former professional baseball player and manager.

Dinky Dudds has moved

Dinky Dudds, which sells new and used children’s clothing, moved from Harvard Plaza in Otis Orchards to the Valley’s Pines Town Center at the corner of Pines and Mission.

The store reopened at its new location in August.

Owners Robbi and Bill Cress said they made the move because business was “just too slow” in Otis Orchards. The store has been expanded to 2,400 square feet from 1,600 square feet.
