Cold Comfort Beat The Heat With Tropical Fruit Over Vanilla Ice Cream

Nothing takes the edge off a sweltering summer day like a scoop of ice cream.

For a quick and easy Tropical Sundae, spoon fresh or canned tropical fruit, such as pineapple, mango or kiwi, into special glasses and top with vanilla ice cream. Spoon kiwi sauce over the ice cream and sprinkle with macadamia nuts.

Tropical Sundae

Recipe from the American Dairy Association and Dairy Council Inc.

3 cups cubed fresh or canned tropical fruit, such as pineapple, mango, banana or kiwi

1-1/2 pints vanilla ice cream

2/3 cup kiwi sauce (see note)

1/4 cup coarsely chopped, toasted macadamia nuts or almonds

Spoon fruit into four stemmed margarita or martini glasses or sundae dishes. Place large scoop of ice cream in each.

Prepare kiwi sauce; spoon over ice cream. Sprinkle with macadamia nuts and serve.

Yield: 4 servings.

Note: To make kiwi sauce, in a blender, process until smooth: 2 kiwi, peeled and cut into pieces; 2 tablespoons honey; and 1 teaspoon lemon juice.
