Mixes Minus Gluten

Five years ago, professional chef and food writer Beth Hillson developed baking mixes made without gluten to meet the health needs of herself and her son.

Today, a full range of products - including the rice-flour-based bread, muffin and brownie mixes pictured here - are available from her Connecticut company, The Gluten-Free Pantry. A portion of the proceeds is donated to research on celiac, an intestinal disease that affects young children.
