Pecan catfish a must-try

Quick Cooking magazine is now called Simple & Delicious.

Taste of Home recently gave the magazine a makeover. It’s still based on tried-and-true recipes sent in by readers and includes meal suggestions, shopping lists, time saving tips and test kitchen secrets.

Most of the recipes in the magazine can be made in 30 minutes or less.

Here’s two recipes from a feature called “Gotta try this.” Editors said: “If you prepare just one meal from this issue, make it this one!”

Southern Pecan Catfish

1 cup finely chopped pecans, divided

1/2 cup cornmeal

1 teaspoon salt, divided

1 teaspoon black pepper, divided

4 catfish fillets (6 ounces each)

1/2 cup butter, divided

1/2 cup heavy whipping cream

2 tablespoons lemon juice

1 to 2 tablespoons minced fresh parsley

In a shallow bowl, combine 1/2 cup pecans, cornmeal, 1/2 teaspoon salt and 1/2 teaspoon pepper. Coat catfish with pecan mixture. In a large skillet, melt 1/4 cup butter over medium high heat; fry fillets for 6-7 minutes on each side or until fish flakes easily with a fork. Remove and keep warm.

In the same skillet, melt remaining butter over medium heat. Add remaining pecans; cook and stir for 1 minute. Add the cream, lemon juice and remaining salt and pepper; cook and stir for 1 minute. Stir in the parsley. Spoon over catfish

Yield: 4 servings

Approximate nutrition per serving: 629 calories, 47 grams fat (17 grams saturated, 67 percent fat calories), 32 grams protein, 20 grams carbohydrate, 170 milligrams cholesterol, 3.5 grams dietary fiber, 783 milligrams sodium.

Bacon-Wrapped Green Beans

3/4 pound fresh green beans

4 bacon strips

3 tablespoons butter

1/4 cup packed brown sugar

1/4 teaspoon garlic salt

1/8 teaspoon soy sauce

Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8 minutes or until crisp tender. Meanwhile, in a skillet, cook bacon over medium heat until cooked but not crisp, about 3 minutes. Remove to paper towels. Drain beans; place about 12 beans on each bacon strip. Wrap bacon around beans and secure with toothpicks. Place on an ungreased baking sheet.

In a small bowl, combine the butter, brown sugar, garlic salt and soy sauce; brush over bundles. Bake at 400 degrees for 10 to 15 minutes or until bacon is crisp.

Yield: 4 servings
