Look for: Choose clean, unbroken eggs. Egg shell and yolk colors do not indicate quality, flavor or nutrition. The breed of chicken is responsible for the shell color. The birds’ diet determines yolk color. Some farmers may sell larger eggs from ducks or turkeys in addition to chicken eggs.

To use: Take them straight home and refrigerate. Store eggs in the coldest part of the refrigerator (40 degrees or below). Shelled eggs can be kept in the refrigerator safely for three to five weeks, according to the USDA.

Best in: Eggs can be eaten alone hard-boiled, fried, scrambled or poached. Or they are delicious in casseroles, quiches, omelets or frittatas. Eggs are an important ingredient in many baked goods.
