Santé chefs will share secrets

Chefs from Santé Restaurant & Charcuterie will share tips and recipes for using local market ingredients in an upcoming class.

The Aug. 1 cooking class will feature ingredients from the Spokane Public Market. For $100, participants will get a recipe notebook and snacks, along with dinner and wine or a beverage at the end of the evening.

The restaurant also has more classes and events planned. Details are on the Facebook page for Santé.

The Kitchen Engine is teaming up with chef David Shallack to promote a cooking vacation aboard Holland America’s cruise line on the Mexican Riviera.

Shallack, the author of “Mediterranean Summer,” will visit The Kitchen Engine next Thursday to sign copies of his best-selling book and promote the cruise.

The 2007 book, published by Broadway Books, will be sold for $16.99 during the event. The memoir was inspired by Shallack’s first position as a chef on the French and Italian Riviera.

Shallack is a noted chef who has also worked on the television sets of Jacques Pepin and Cat Cora. There’s more information about him at www.mediterranean summer.com/the-chef.

He’ll do cooking demonstrations, sign books and meet customers from 11 a.m. to 1 p.m., 3 to 5 p.m. and 6 to 7:30 p.m. at The Kitchen Engine.

The cruise is planned for Feb. 18-25, 2012. Costs range from $1,100 to $1,400.

Plum delicious

This new cookbook makes me want to wish the summer away just so I can try the Herb-Roasted Salmon with Wild Huckleberry Sauce and the Fresh Peach Gelato.

Written by Romney Steele, “Plum Gorgeous” (Andrews McMeel Publishing, $25) celebrates the seasons with sweet and savory recipes inspired by the ripening fruit.

Steele shares some 60 recipes in the book, along with her reminiscences from the year she spent living in a mountaintop orchard in Big Sur. The beautiful photography is by Sara Remington.

Luckily, I won’t have to wait, for there are plenty of ideas for fruit in season now, including Raspberry Rhubarb Rose Petal Jam and Strawberry Tartlets.
