Mead from Mace Mead Works is not the thick, super-sweet libation that many expect, said owner Reggie Mace. He uses winemaking techniques he learned while working at Dunham Cellars in Walla Walla to make drier honey wines. At the Dayton, Wash., tasting room Mace serves cocktails made with his meads.
