Fresh Sheet: Flour power in Colfax

Joseph’s Grainery in Colfax has a new grist mill.

The stone burr mill, manufactured by Meadows Mills in North Carolina, produces fine whole grain and legume flours. It’s the first grist mill in Colfax since fire destroyed the Colfax Mill in 1957.

But Colfax grist mill history goes back much further. The first Colfax mill was built in 1873. Six years later, it was badly damaged by flooding, and three years after that it was partially burned, then rebuilt. It was destroyed by fire in 1920.

A new mill was built in 1936, only to be destroyed by fire.

Joseph’s Grainery’s new addition marks the first grist mill in Colfax in 67 years.

The grainery produces whole grain flour, meaning it contains every part of the grain or legume.

Frozen finds

13 Foods has introduced its first-on-the-market frozen Kabuli! Petite Chickpeas and frozen Pardina! Lentils.

Through its special cooking and freezing processes, the company is able to provide whole legumes with no additives.

13 Foods is a new, family-owned company based in Lewiston. It procures and manufactures all of its products in the Palouse region.

Its frozen chickpeas and lentils were introduced at the 2014 National Grocery Association Show in Las Vegas in February.

Mudslide aid

Thursday profits from Papa John’s Pizza will be donated to Salvation Army’s Disaster Relief Fund to help Oso, Wash., mudslide victims.

The three Spokane stores – along with three locations in the Tri-Cities and 40 in the Puget Sound area – will donate profits from the entire day’s sales.

Papa John’s regular menu will be available. Plus, stores will offer a large, one-topping pizza for $10.

This isn’t the only help Papa John’s has offered in the wake of the slide. The nearby Marysville store has been donating pizzas to affected families as well as search and rescue personnel.
