Celebrate new ‘Star Wars’ film with a Planet Hoth Toddy

“Star Wars: The Force Awakens” opens Friday. To celebrate, could Bacardi interest you in a chilled rum Planet Hoth Toddy?

The name of the cocktail refers to the ice planet that first appeared in “The Empire Strikes Back.” The cocktail features Bacardi Gran Reserva Maestro de Ron, lime, Maraschino liqueur, egg white, simple syrup and nutmeg.

You might want to mix one up while you’re rewatching your favorite “Star Wars” films in preparation for the premiere.

Here are the instructions:

Planet Hoth Toddy

2 parts Bacardi Gran Reserva Maestro de Ron

¾ part lime juice

½ part simple syrup

¼ part Maraschino liqueur

1 egg white

Shake all ingredients vigorously in a shaker with plenty of ice. Double strain into a coupe and garnish with nutmeg.

MacKenzie River Pizza closes

The downtown location of MacKenzie River Pizza Co. closed at the end of November.

“We’ve determined that we will best be able to represent our brand to the Spokane community with two locations rather than three,” Ryan Fuller, director of operations for the Glacier Restaurant Group, said in an email. “With three locations, we felt that we were slightly saturated in the Spokane market, especially when considering the variety of wonderful restaurants Spokane has to offer.”

MacKenzie River Pizza Co. opened Oct. 1, 2013, at 818 W. Riverside Ave., Suite A. It was the third MacKenzie River restaurant in Spokane. The location had previously been Ciao Mambo, an Italian restaurant also owned by Glacier.

About 90 percent of the staff at that location relocated to another MacKenzie River, Fuller said, noting parking was a challenge downtown.

“We have enjoyed our time there and will certainly miss serving the downtown Spokane community (and hope to see them at our other two Spokane locations),” Fuller wrote.

There are MacKenzie River restaurants in Montana, Idaho, Indiana, North Dakota and South Dakota.
