Swain shares salmon recipe

Davenport-raised food blogger Cindy Swain made another appearance on Italy’s most popular cooking show.

Swain recently competed on the new “Master Blog” segment of “La Prova del Cuoco,” which pits two bloggers against each other on national television. The segment featured expats from two countries: the U.S. and Thailand. Swain made Salmon Wraps with Kale Chips but lost to a Pad Thai recipe.

In a recent email, Swain said she knew she “didn’t have a chance” against Pad Thai. “I would have even voted for her recipe if I could have.”

The segment, which aired in February, marked her second appearance on “La Prova del Cuoco.” Last fall, Swain won the grand prize of 2,000 euros competing in the show’s regular cooking contest – “La Gara Culinaria” – in which teams are made up of a professional chef and a home cook.

Swain founded Italicana Kitchen and writes about food from Italy’s Emilia-Romagna region.
