Spokane Herbal Fair
This natural healing expo features herbalists and herbal companies from Washington, Idaho, Oregon and Montana.
There will be workshops, too – on women’s health, herbs for pregnancy, pre- and post-natal care, and more. Mothers will get the chance to enter a drawing to win door prizes.
The fair takes place from 10 a.m. to 6 p.m. Sunday at the Corbin Senior Activity Center, 827 W. Cleveland Ave. Admission is $3 for adults; children get in free.

Cauliflower power
Here’s a way to sneak more veggies onto your plate using cauliflower.
For a low-carb susbstitute for mashed potatoes, cut a medium head of cauliflower into small pieces, boil until tender, then purée in a food processor or using an immerson blender. Add ½ teaspoon minced garlic, if desired. Serve with butter, salt, pepper, a sprinkling of chives or parsely. For more creaminess, stir in 1 tablespoon of cream cheese and ¼ cup Parmesan cheese.
In place of rice, grate a cauliflower with a hand-held grater or coarsely chop it in a food processor. In multiple batches, place cauliflower into a heated, nonstick frying pan. (You won’t need to add oil or water.) Cook for about 5 minutes, stirring constantly, until tender. Or, microwave the cauliflower “rice” in a covered microwave-safe dish for 5 minutes on high.
Season and serve, as desired. Or use it in your favorite recipe that calls for rice.
