Cochinito is hosting a beer dinner featuring the flavors of Mexico and South America as well as brews from Iron Goat Brewing.

The seven-course dinner is Aug. 27, and now’s the time to register.

There’s seating for 30. Tickets are $60 each. Dinner is at 6 p.m.

Travis Tveit, the executive chef at Iron Goat’s downtown brewpub, is creating a surprise course to kick off the dinner.

After that, courses come from Cochinito owner and executive chef Travis Dickinson.

Early on, expect liver mousse, toast and kumquat-orange marmalade, paired with Trashy Blonde, and a snapper taco paired with Paul’s Pale Ale. After that, look for Brick and Steel IPA with pork belly “pastor” and pickled pineapple, Buzzsaw McThunder Juicy IPA with rabbit in mole Amarillo and smoked hazelnut gremolata, and Bob’s Your Uncle Porter with birria de Chivo, coffee tortilla, romesco and caramelized carrot and salsify.

For dessert, a Blackberry Apricot Sour will be paired with a coconut-bourbon cake with compressed blackberry and apricot gastrique.

Call (509) 474-9618 to reserve a spot.
