Rüt takes root in former Picabu Bistro location

Rüt, a plant-based kitchen and bar, is opening later this month in the former site of Picabu Bistro on the South Hill.

Chefs Justin Oliveri and Josh Lorenzen are expected to open the American-style gastropub at 901 W. 14th Ave. by the end of March, pending liquor license approval.

Lorenzen was previously employed at Mizuna in downtown Spokane. Most recently, he was sous chef at Bijou Cafe in Portland. Oliveri is co-owner of Cascadia Public House in north Spokane, which is known for its regionally sourced ingredients.

Rüt’s tentative menu features soups, salads and plates such as buffalo cauliflower wings, avocado spring rolls, sweet potato fries and a vegan burger topped with lettuce, onion, charred tomato jam and roasted garlic aioli on a pretzel bun.

Rüt will offer craft cocktails as well as a limited beer and wine menu. Brunch and kids menus are also in the works, Lorenzen said.

Lorenzen said although Rüt offers several healthy, vegan options, the intention is for the menu to be enjoyable for all.

“We want to serve the vegan community, but also other people,” he said. “We are trying to be approachable, current and modern and we hope to be received the right way.”
