We LOVED our stay at The Trailer Pond, the subject of this week's column.
This very special destination at Alta Colina Vineyard and Winery in beautiful Paso Robles wine country reminded us yet again why we love the challenge of living in a teeny space. Top of the list of rewarding experiences we savor are meals outdoors.
Add to that scenario an absolutely fantastic kitchen set up for guests and you've got a winner, winner, not exactly a chicken dinner.
After a wonderful tasting on the Summit Vineyard deck, I got to work on prepping a pile of shrimp for the grill. Seasoned with Tajin salt and basted in the oil from a jar of marinated artichoke hearts... because that's what I had to work with... I served those camarones with guacamole, roasted poblano peppers and charred scallions in a kind-of fajita type situation.
The verdict? YUM! Plus, the setting -- with the setting sun turning the sky amber -- was spectacular. We felt incredibly grateful.
