Serve Noodle Raisin Kugel As Part Of Hanukkah Feast
For Hanukkah, serve this noodle raisin kugel. Drape your table with a blue satin tablecloth. Set the kugel in a silver serving dish in the center of the table. Fill star-shaped cookie cutters with wax crystals and place tall Hanukkah candles in their center. Star-shaped napkins may be made and placed on the table for added effect.
Noodle Raisin Kugel
From Carnation Evaporated Milk.
8-ounce package cream cheese
1/2 cup (1 stick) butter or margarine
3 eggs
1-1/2 cups (12-fluid-ounce can) evaporated milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
4 cups (8 ounces) dry wide egg noodles, cooked and drained
1 cup raisins
Cinnamon sugar (see note)
Combine cream cheese and butter in a large, heavy-duty saucepan over low heat, stirring until melted. Remove from heat.
Add eggs, one at a time, stirring well after each addition. Stir in evaporated milk, sugar and vanilla. Stir in cooked noodles and raisins.
Pour into a 13- by 9-inch baking dish; sprinkle with cinnamon sugar. Bake in a 350-degree oven for 20 to 25 minutes or until almost set. Remove to wire rack; let stand for 5 minutes. Serve warm.
Yield: 12 servings.
Note: To make cinnamon sugar, combine 2 teaspoons granulated sugar and 1/2 teaspoon ground cinnamon in a small bowl.
