Grilled Honey-Soy Chicken Sandwich Easy, Flavorful Make-At-Home Meal

Chicken sandwiches are one hot ticket at most fast-food places, but it’s easy to make your own at home.

In this flavorful version, chicken marinates in a combo of orange juice and seasonings. Honey adds a hint of sweetness.

The buns can be toasted by grilling or broiling right alongside the chicken. If you like, spread ketchup or mustard on each bun before serving.

Grilled Honey-Soy Chicken Sandwiches

3 tablespoons orange juice

1 tablespoon reduced-sodium soy sauce

1 tablespoon honey

1 teaspoon lemon-pepper seasoning

1/2 teaspoon ground ginger

1/8 teaspoon garlic powder

2 skinless, boneless chicken breast halves (8 ounces total)

2 whole-wheat hamburger buns

Lettuce leaves

1 plum or other ripe tomato, sliced

For marinade, in a shallow, nonmetal dish combine orange juice, soy sauce, honey, lemon-pepper seasoning, ginger and garlic powder. Set aside.

Place chicken breasts between two sheets of plastic wrap. Pound each with a meat mallet to a 1/2-inch thickness; place in the marinade. Cover and refrigerate for 4 to 6 hours or overnight.

At serving time, remove chicken from marinade, reserving marinade. Place chicken on an uncovered grill directly over medium-hot coals. Grill about 10 minutes or until tender and no longer pink, turning chicken once. (Or, place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from heat for 6 to 7 minutes, turning once.) During the last 2 minutes of grilling or broiling, brush chicken with reserved marinade.

Split buns and place on grill rack or broiler pan for 1 to 2 minutes to toast. Serve chicken breasts on toasted buns. Top each with lettuce and tomato slices.

Yield: 2 servings.
