Booklet Gives Handling Tips

The victors sometimes get the spoils when they don’t properly handle their game meat.

A simple but thorough booklet ought to save the day for more than one family bringing home venison and other big-game this season.

“Big Game: From Hunt to Home,” a new publication from the Washington State University Cooperative Extension, gives step-by-step tips to help hunters handle, butcher and store meat correctly.

The 44-page, illustrated publication covers how to handle deer, elk, antelope and bear meat, including field dressing, aging, skinning and boning big game.

The authors also give pointers on food safety as well as marinating and cooking. Several recipes are included.

One chapter covers preserving game meat, including freezing, drying and canning.
