Delia Kennedy top winner in ‘Beat-the-clock Breads Contest’

From Staff Reports

Delia Kennedy’s Marmalade Money Bread is the top winner in the “Beat-the-Clock-Breads Contest” in the March/April edition of “Quick Cooking.”

Kennedy, of Deer Park, says any jam can be substituted for the marmalade if you don’t have it on hand.

“People are always surprised to hear that the loaf starts with tubes of buttermilk biscuits,” Kennedy told “Quick Cooking.” She makes the pull-apart bread about once a month.

Here’s her recipe:

Marmalade Money Bread

From Delia Kennedy, of Deer Park

2/3 cup orange marmalade

1/2 cup chopped pecans or walnuts

1/4 cup honey

2 tablespoons butter, melted

2 tubes (71/2 ounces each) refrigerated buttermilk biscuits

In a small bowl, combine the marmalade, pecans, honey and butter. Cut each biscuit into four pieces. Layer half of the pieces in a greased 10-inch tube pan; top with half the marmalade mixture. Repeat.

Bake at 375 degrees for 27-30 minutes or until golden brown. Cool in pan for 5 minutes before inverting onto a serving plate. Serve warm
