New categories included in Pillsbury Bake-Off
The 42nd Pillsbury Bake-Off includes two new categories: Cooking for Two and Brand New You.
Cooking for Two is geared toward the growing number of smaller households and empty nesters. The meal should just have two servings.
Entries for the Brand New You category should be lower in fat and calories, and use reduced fat products, fish or leaner meat cuts or more fruits and vegetables. This recipe for a twist on a Philly sandwich would qualify for the category. Nina Naffziger Nissen of Hendersonville, Tenn., won a finalist spot in the 2002 competition with this recipe below.

Turkey Philly Loaf
1 can (11-ounces) Pillsbury refrigerated crusty French loaf
1/2 medium green bell pepper, thinly sliced
1/4 cup sliced onion
1 jar Green Giant sliced mushrooms, drained
2 teaspoons olive oil
1/4 teaspoon dried rosemary leaves, crushed
2 ounces fat-free cream cheese, softened
4 ounces thinly sliced cooked turkey
4 ounces sliced mozzarella cheese
Heat oven to 350 degrees. Bake loaf as directed on can. Cool 10 minutes.
Set oven to broil. On an ungreased broiler pan rack, place bell pepper, onion and mushrooms. Brush with oil; sprinkle with rosemary. Broil 4 to 6 inches from heat 8 to 10 minutes, stirring occasionally, until bell pepper and onion are fork-tender.
Return oven temperature to 350 degrees. Cut loaf in half lengthwise. Spread bottom half with cream cheese. Layer with turkey, bell pepper mixture, cheese and top half of loaf. Place filled loaf on ungreased cookie sheet.
Bake 2 to 3 minutes or until cheese is melted. Cut into 4 pieces and serve.
Note: For easy cleanup, line the broiler pan with foil. Or, if you prefer, sauté the bell pepper and onion in oil in a skillet set over medium-high heat until tender; stir in the mushrooms and cook until tender.
Yield: 4 servings
Nutrition per serving: 370 calories, 13 grams fat (5 grams saturated fat, 32 percent fat calories), 25 grams protein, 39 grams carbohydrate, 40 milligrams cholesterol, 2 grams dietary fiber, 850 milligrams sodium.
