Surprise Mom with Popcorn Truffles

Special treats for mom as Mother’s Day nears can range from elaborate to simple, all equally inspired by love, of course. Here’s a suggestion for a really easy-to-make, fun project for dads and kids to conspire on together. The result is – ta-da! – a delectable dessert to hand Mom at a perfect moment of her day.

These “Popcorn Truffles” may well please the whole family. We all know the classic truffle, that rounded little dream of creamy, melt-in-the-mouth chocolate. These have a different look and texture, but the satisfaction per mouthful is comparable. And popcorn is being seen around quite sophisticated culinary company these days.

Rocky Road Popcorn Truffles

Recipe for the Associated Press developed by Chef Ed, of Dale & Thomas Popcorn

Pan spray

1 cup popped popcorn

1 cup mini marshmallows

1 cup salted peanuts

1 pound semisweet baking chocolate

Spray 12 mini-muffin pans with pan spray to coat lightly. Divide a mix of popcorn, marshmallows and peanuts equally among the mini-muffin cups.

In a microwaveable container, melt chocolate in microwave on high for 45 seconds; stir chocolate. Repeat microwaving and stirring, 15 seconds at a time, until chocolate is melted smooth. Divide chocolate among muffin cups by pouring carefully into the center of each cup, filling each to the top. Gently tap muffin tin on counter to eliminate air bubbles. Place in refrigerator and cool until chocolate is fully set. Unmold and enjoy.

Yield: 12 “truffles.”
