Some super accolades for A.C. LaRocco

Local frozen pizza maker A.C. LaRocco is getting some more love.

Dr. Stephen Pratt, author of “SuperFoods Rx: Fourteen Foods That Will Change Your Life,” has selected the whole-wheat crust, organic vegetarian pizzas to be the only frozen pies to carry his SuperFoods logo.

He commended them for their “ultra-high quality, fresh frozen pizzas that are loaded with just the kind of SuperFoods I’ve written about,” according to a news release from AC LaRocco. “SuperFoods Rx” is a New York Times bestseller that outlines the health benefits of 14 foods, detailing how they can improve your health and well-being. The pizzas also meet the goals of the recently updated food-guide pyramid, A.C. LaRocco president Clarence Scott said in the news release.

The pizzas come in eight flavors, including: Quattro Fromaggio, Spinach & Artichoke, Greek Sesame, Garden Vegetable, Spinach & Artichoke, Polynesian, Tomato & Feta, and Shitake Mushroom. Day of the Dead celebration

Normally, you’d have to travel with chef Lynne Wiedemann and her husband, Frank, to Todos Santos, Mexico for this kind of food.

The couple, through their business Cook with US, hosts culinary vacations in Baja, Mexico, but they are bringing a taste of the cuisine and folk art of that area to Coeur d’Alene tomorrow night.

Cook with US, along with the Singing Shaman Traders, will have cooking demonstrations and a buffet of traditional Mexican party foods at a celebration to honor the cultural tradition of the Day of the Dead. There will also be baskets, pottery, jewelry and other indigenous Mexican handicrafts for sale. A slide show will be presented on the Tarahumara Indians.
