Edwina Gadsby’s Thai Sweet Chili Chicken Sandwiches could be real winners
For the second year in a row, Edwina Gadsby of Hayden is one of 15 finalists in the “America’s Better Sandwich” contest.
Here’s her recipe.
Edwina’s Thai Sweet Chili Chicken Sandwiches
1/4 cup nonfat plain Greek yogurt
1/4 cup Thai sweet chili sauce
1/2 teaspoon fresh orange or lime juice
3/4 cup chopped cooked chicken breast
1/4 cup chopped ripe mango
3 tablespoons grated carrots
3 tablespoons thinly sliced celery
2 1/2 tablespoons chopped red bell pepper
2 tablespoons chopped cashews
1 1/2 tablespoons thinly sliced green onion
1 tablespoon chopped Thai basil or cilantro
2 Oroweat Sandwich Thins Rolls Multi-Grain or Honey Wheat rolls
1/2 cup packed baby greens or baby spinach
6 thin slices seedless cucumber
Stir together yogurt, sweet chili sauce and juice in medium bowl. (Remove and reserve 2 tablespoons.) Stir in chicken, mango, carrots, celery, bell pepper, cashews, onion and basil (or cilantro); mixing to combine.
Spread reserved yogurt mixture on cut sides of the Sandwich Thins rolls. Layer the greens evenly on the bottom halves of the rolls. Top each with 1/2 the chicken mixture and cucumber slices. Add the top halves of the rolls.
