Fresh Sheet: Bonefish Grill opens in NorthTown Mall

The first Eastern Washington location of Bonefish Grill is now open at Spokane’s NorthTown Mall.

The casual seafood restaurant is located next door to Outback Steakhouse, which moved to the mall’s redeveloped north concourse earlier this month.

Bonefish is a franchise company of Tampa, Florida-based Bloomin’ Brands. Evergreen Restaurant Group, the Pacific Northwest franchisee, also operates Bonefish restaurants in Richland and Bothell.

Bonefish, opened March 21 at 4750 N. Division St., specializes in fish from around the world as well as wood-grilled dishes and craft cocktails.

Hours are 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday and 11 a.m. to 9 p.m. on Sunday.

Farm to table

Come Christmas, guests at Santé Restaurant and Charcuterie will be able to eat meat raised by chef Jeremy Hansen.

Hansen, who owns Santé with his wife, Kate, is raising four red Angus cows at a relative’s ranch. He got the cattle in February and plans to butcher them in autumn.

“It will be Christmas charcuterie,” he said.

Next year, Hansen is hoping to raise six cows and produce his own wagyu beef.

In the meantime, he also plans to grow his own tomatoes (for house-made ketchup) and other fruits and vegetables for use in his restaurants. He and his wife also own Common Crumb, Hogwash Whiskey Den, slated to open later this spring, and Inland Pacific Kitchen, slated to open this summer.

The family farm encompasses about 30 acres south of Spokane and is known as Valhalla Ranch.

Liturgical cookbook on the way

A Catholic moms’ group from St. Joseph Parish in Otis Orchards will be selling liturgical cookbooks to raise money for weekend meals for elementary school children in need.

“Foods of Our Faith: Liturgical Recipes and Traditions” will be available for preorder with delivery slated for mid-October. Proceeds will go to the Bite To Go program at Otis Orchards Elementary School.

The cookbook will include seasonal recipes centered around the church calendar and occasions including Advent, Christmas, Lent and Easter as well as feast days and family traditions.
