Jeremy Hansen offers sneak peek at Octopus Gin

Chef Jeremy Hansen is presenting a test dinner for his forthcoming Octopus Gin Bar.

The new bar will be located at the old Ridpath Hotel in downtown Spokane. The preview dinner will be at Inland Pacific Kitchen, 304 W. Pacific Ave.

There are only six spots left.

The menu features 10 courses with cocktail pairings from bar manager Simon Moorby. To start, there’s a French 75 with lavender honey paired with an oyster with lavender honey and lavender foam.

Look, also, for a gin and tonic with ginger-chili-lime fried chicken, a Negroni wih roasted cod and charred orange, and a Martinez with wagyu beef and cherries. Finish with chocolate mousse and a Clover Club with egg white, strawberry, basil, gin and lemon.

Dinner is $130 per person. Service begins at 6 p.m. Sept. 11. For reservations, call (509) 464-6541.
