Café Rio Mexican Grill is opening a new restaurant in Spokane Valley today.

This marks the chain’s second location in the Inland Northwest – a store opened in Coeur d’Alene in 2012 – and 67th in the country. Headquartered in Salt Lake City and founded in 1997, Café Rio maintains a “no microwaves and no freezers” policy at each store. Its menu is inspired by traditional Mexican cooking in the Rio Grande region of northern Mexico, southern Texas and New Mexico.

Today’s grand opening is slated for 10:30 a.m. at 13920 E. Indiana Ave.

A representative from Central Valley School District is expected to attend and receive a $2,500 donation to commemorate the opening of the new restaurant.
