Cracker Barrel is hiring for its new Coeur d’Alene location.

The casual, Southern, country-themed restaurant and retail outlet plans to open at 1675 W. Lee Court in late June. The goal is to hire 175 full- and part-time employees. In-person interviews began May 21.

Bank on cookies, pastries

It might seem like an unlikely pairing. But Rocket Bakery and STCU are joining forces in downtown Spokane.

The credit union’s downtown branch, opened in 2000, is moving to a new space in River Park Square, adjacent to the forthcoming Urban Outfitters store. STCU will share the 2,900-square-foot storefront with the bakery. Both businesses plan to move in by October.

Founded in 1992 by Jeff and Julia Postlewait, Rocket Bakery serves coffee and pastries at five sit-down locations, plus the Space Station drive-through. The Postlewaits also co-own the popular Rocket Market at 726 E. 43rd Ave.

Member-owned, not-for-profit STCU, formed by educators in 1934, has more than 153,000 members and more than $2.2 billion in assets. It has 18 branches in North Idaho and Eastern Washington.

On the move

The first Pinot’s Palette location in Washington state is moving to a larger location this summer.

The wine-and-art franchise opened in February 2014 at 23 W. Second Ave. in downtown Spokane. Owner Jackie Casey expects to be in the new location, next to the Spokane Comedy Club, at 319 W. Sprague Ave., by mid-July.

Casey, along with partner Jeff Hansen, also owns the Pinot’s Palette in Coeur d’Alene.

The new spot seats about 55 people and includes additional space for private parties of up to 14 people. That room allows Pinot’s Palette to hold special events on Thursday, Friday and Saturday nights, something the business couldn’t do in its initial location.

Brain Freeze reframed

Brain Freeze has found a new home on Spokane’s South Hill.

The store opened May 25 at 1230 S. Grand Blvd. and – like its sister location in Kendall Yards – serves 24 flavors of ice cream, espresso and sandwiches.

This is the second South Hill home for Brain Freeze in less than a year. The ice cream shop opened a retail location in July on Grand Boulevard about 1.5 miles south of the new location. When that building was sold, Brain Freeze owner Tom Purdum decided to relocate. The new spot previously held a Baskin & Robbins and has been completely remodeled.

Hours are 7 a.m. to 10 p.m. Monday through Thursday, 7 a.m. to 11 p.m. Friday and 8 a.m. to 11 p.m. Saturday and 8 a.m. to 10 p.m. Sunday.

The Kendall Yards location, opened in May 2014, is at 1238 W. Summit Parkway.
