Munkynukl Defends The Porch

Munkynukl: I can assure you that virtually EVERYTHING that comes out of that kitchen is made from scratch. every sauce, every salad dressing, every side dish, every soup, etc. about the only thing we dont do is bake our own bread or make fresh pasta. maybe that is why we can crank out food for 30+ tables on a busy friday night with only 3 people in the kitchen. I can assure you that if you were to stick your head into an olive garden kithen, you would likely see anywhere from 6 to 12 people back there heating up another box of soup, grabbing another case of pre-breaded chicken, defrosting more special sauce and so on. Or you could visit any one of hagadones fine establishments and pay 2 to 3 times as much for food that is mediocre at best. You can read the entire HBO Grub Club thread re: The Porch here .

Question: We have two suggestions for our next HBO Grub Club venue — Syringa & Nosworthy’s. Let me know which you prefer for this week. I’ll make the call at noon.

As someone who has worked in the kitchen at the Porch since the day it opened and at Moon Time for 3 yrs before that, i really feel the need to clarify a few things. You didn’t like your food? I get that. In fact I completely respect that. There are however a number of things you are completely wrong about.

1.processed corned beef? if by “processed” you mean whole corned beef brisket roasted for 3 or 4 hours with a pitcher of beer and a handful of spices, then trimmed of fat, sliced and portioned, then i guess we are guilty.

2.no mustardy zip? it says right on the menu that it comes with thousand island dressing.(made from scratch, btw) we would be happy to (and often do) substitute sweet hot or stone ground mustard next time.

3.salty french dip? no salt goes anywhere near that sandwich, other than the aujus, which is pretty salty by nature.(we also roast our own beef)

4.Costco chicken?!? we do get frozen chicken breasts, but once thawed, we trim and tenderize them and cook to order. absolutely nothing precooked about it.

5.bottled peanut sauce? wrong! coconut milk, peanut butter, red curry paste, brown sugar and fish sauce. sure, the coconut milk comes from a can, the peanut butter from a bucket, the fish sauce from a bottle, etc., but it is once again “made from scratch.”

Judging by the overwhelming majority of positive reviews on here, I’m quite certain that the Porch will remain one of the best places in north idaho to eat for many years to come.
