Dead bears can kill, too
In the interview by Carol Spurling with Ken Albala and Rosanna Nafzinger published in the Food section on Wednesday, Aug. 25, she quotes him as saying that the bear roast was served rare. Bears can be infested with trichinosis, which can be passed to humans and is very dangerous and sometimes fatal. Bear meat should always be well cooked to kill the larvae.
Trichinosis at one time was considered a common threat in pork, but it also infests several other types of game animals.
