RV cooking: World’s easiest lasagna’s a favorite

Quick and easy lasagna has become a staple in our tiny kitchen on wheels. It involves putting together a few ingredients and nuking the saucy casserole. Not fancy, but so satisfying.

Key ingredients include the oven ready pasta sheets from Barilla and a jar of pizza sauce — thicker than the typical marinara and that smaller jar takes up less room in the pantry. Wild card add-on options include the Grecian eggplant with tomatoes and garlic from Trader Joe’s or some pesto. Layer all that stuff with a shower of mozzarella and parm on top. Cover and zap for 10 minutes. Dinner is served!

Before buying a motorhome, I only used the microwave for warming up leftovers. This was the first taste of success, opening the door to new inspiration.
