This pancake was probably the largest (think hubcab), tastiest (so good I didn’t even think about plopping peanut butter on top), most perfectly textured (as in, it soaked up plenty of syrup without getting all soggy and sad) pancake I’ve had since my Granny closed her kitchen back in 2001.

As an added bonus, once ingested, it settles in your belly and absorbs excess alcohol. So long, hangover. Hello, muffin top!
