Follow a big night with breakfast at Knight’s
When I moved to Spokane, just three months before the eruption of Mount St. Helens , breakfast was one of my family’s favorite meals. In my current marriage, breakfast is something that happens at a time when most people are thinking of lunch.
Back in the early 1980s, we discovered Knight’s Dine r. It was located on Washington then, in the parking lot of the General Store. After going through a couple of ownership changes, the eatery ended up moving to its present location, just north of Spokane Community College at 2909 N. Market St.
And after eating there this morning with my friend Jim Loudermilk, finding a couple of seats even though it was 8:40 or so and the place was jammed, I find it nice to report that not much has changed. Things may be a little more costly than they were 30 years ago, but the omelets are still giant, the hash browns still tasty and the bacon still crispy. And for being diner brew, the coffee wasn’t bad either.
So if you’ve had a big night and you’re looking to carbo-load, and you don’t mind bumping elbows with your fellow diners, try Knight’s. Look for the sign of the lance.
