Year of the Sainted Brewers: St. Boniface and St. Medard of Noyon
For St. Boniface we brewed up a brown amber ale in which the dark grains were cold-steeped to minimize any char flavors and let a smooth mouthfeel and flavor take the center. For St. Medard of Noyon, we infused the wort with wild lilac flowers for a flour, creamy sour beer.
