French Fries That Don’t Show Up On Radar?
A pair of Eastern Washington companies have teamed up to make a new french fry they say won’t wilt under fast-food heat lamps.
“Stealth Fries” are the work of Lamb-Weston, the nation’s largest potato processor and Penwest Foods, a food-grade starch manufacturer.
The stay-crispy fries will debut today at a national food service trade show in Chicago.
Lamb-Weston’s Stealth Fries are protected with an invisible coating of a modified starch product from Richland-based Penwest Foods, the company’s chief executive officer, Tod Hamachek, said Thursday.
The partnership with Kennewick-based LambWeston and the growing demand for potato starch products to flavor reduced-fat and no-fat foods have helped Penwest Foods finish a $9.1 million plant expansion, he said.
