Doves On The Barbecue
Fresh doves make a fine barbecue. Most dove hunters simply pop the breasts out with thumb and finger, cut off the wings and remove skin and feathers.
Brush olive oil on the breasts, dust with salt and pepper and cook for five to 10 minutes on a barbecue grill. Serve with fresh tomatoes and a cold pasta or rice salad, and eat it all outdoors under the moonlight. Three or four doves satisfy the average appetite.
