Turkey makes an encore appearance
There’ll be lots of bravo calls when your Thanksgiving turkey makes its encore appearance in a pot pie along with the mashed potatoes. If the potatoes were all gobbled up the first time around, our Pilgrim Pie is worth your cooking up a fresh batch. If you like, you can reheat leftover potatoes in the microwave oven, or if you’re doing it on the stove top, stir constantly to keep them from getting crusty or browned.
As for the gravy, use the canned product or one of the easy and excellent mixes. If you have a little left from dinner, supplement it with the commercial kind.
Then there’s always a reliable salad for the second time around. Our Creamy Dijon is a delicious version.
Pilgrim Pie
4 cups (about 1 1/4 pounds) cooked turkey chunks
1 cup frozen peas
1 cup frozen corn kernels
2 (10 1/2 -ounce) cans turkey gravy or 2 1/4 cups leftover turkey gravy (can be homemade and canned combined)
1/4 cup snipped chives, divided
1 1/2 teaspoons dried thyme leaves
4 cups leftover mashed potatoes
Preheat oven to 400 F. In large bowl mix turkey, peas, corn, gravy, 2 tablespoons of the chives and the thyme. Turn into shallow 2 1/2- to 3-quart baking dish; set aside. In microwave-safe dish warm potatoes on HIGH 3 minutes; mix in remaining chives. Cover turkey mixture with potatoes. Place dish on baking sheet. Bake about 25 minutes in center of oven until turkey mixture is bubbly and potatoes begin to brown. Serve with cranberry sauce, if desired. Makes 6 servings.
Creamy Dijon Turkey Salad
2/3 cup Gourmayo Cream Dijon mayonnaise
1 tablespoon lemon juice
2 cups cubed cooked turkey
1 apple, chopped
1/2 cup sliced celery
1/2 cup finely shredded carrot
3 tablespoons minced red onion
Combine mayonnaise and lemon juice in large bowl. Add turkey, apple, celery, carrot and onion; toss to coat. Cover and chill until ready to serve. Makes 4 (3/4-cup) servings.
