A bison burger recipe

This recipe is from Carmen Creek Bison.

Gorgonzola Burgers

1 pound ground bison

1 egg

1/2 cup panko flakes (or bread crumbs)

1 clove garlic (fine chop)

1 teaspoon Worcestershire sauce

1/4 cup red onion (very fine dice)

1 tablespoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

5 ounces diced gorgonzola cheese

Mix all ingredients thoroughly and form into patties. Cook on grill over high heat for approximately 2-3 minutes per side depending on size of patty. These burgers should be cooked for half the time of beef burgers. Do not overcook.

Per serving: 478 calories; 38 grams protein; 31 grams fat; 15 grams saturated fat; 14 grams carbohydrate; 1 gram fiber; 178 milligrams cholesterol; 992 milligrams sodium

Makes 4 burgers.
