Yes! An easy side dish!

If you enjoy French Onion Soup, then I think you will enjoy this wonderful side dish, too!

French Onions and Rice

2 cups chopped onion

1 (14- 1/2 -ounce) can beef broth

1- 1/3 cups uncooked instant rice

1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes

1/4 -cup grated reduced-fat Parmesan cheese

In a large skillet sprayed with butter-flavored cooking spray, saute onion for 8 to 10 minutes or until onions are golden brown.

Stir in beef broth.

Bring mixture to a boil.

Add uncooked rice, parsley and Parmesan cheese.

Mix well to combine.

Cover, lower heat, and simmer for 10 minutes or until rice is tender and most of liquid is absorbed, stirring occasionally.

Serve at once.

Makes 4 (1 cup) servings.

Each serving equals: 156 calories, 0 g fat, 5 g protein, 34 g carb., 444 mg sodium, 2 g fiber
