Ripening avocados
Q: I can never find an avocado that’s soft or even close to it at the store. What’s the best way to ripen one?
A: Because avocados are extremely delicate (and perishable when fully ripe), most are shipped to stores before they soften. To ripen, place the avocado in a paper bag at room temperature for two days, until it yields to gentle pressure when you squeeze it lightly. (Putting an apple or banana in the bag speeds up the process.) Once ripe, avocados can be stored in the refrigerator for a few days. Slice for salad or make guacamole.
