This is so “cheesy,” you’ll never believe you’re eating healthy!
Four Cheese Macaroni
3 cups hot cooked elbow macaroni
1/4 cup fat-free half & half
1/4 cup fat-free milk
3/4 cup shredded reduced-fat Cheddar cheese
3/4 cup shredded reduced-fat mozzarella cheese
3 ( 3/4 -ounce) slices reduced-fat Swiss cheese, shredded
1/4 cup reduced fat Parmesan style grated topping
1 teaspoon dried parsley flakes
1/8 teaspoon black pepper
In a large saucepan sprayed with butter-flavored cooking spray, combine macaroni, half & half and milk. Add Cheddar, mozzarella, Swiss and Parmesan cheese. Mix well to combine. Stir in parsley flakes and black pepper. Cook over medium-low heat for 5 minutes or until cheeses melt, stirring often. Makes 6 ( 3/4 cup) servings.
Hint: Usually 2 cups uncooked elbow macaroni cooks to about 3 cups.
