Peach Melba Breakfast Muffins
2 tablespoons raspberry spreadable fruit
1/2 cup (1 medium) peeled and sliced fresh peach
1 English muffin, split and toasted
In a microwave-safe bowl, combine spreadable fruit and sliced peaches. Cover with waxed paper and cook on HIGH (100 percent power) for 60 seconds. Let set for 1 minute. Evenly spread mixture over toasted muffins. Serves 2.
