Fudgy Peanut Butter Chip Muffins
Here is a special muffin to put with your other brunch recipes when everyone is home for the holiday season.
Fudgy Peanut Butter Chip Muffins
1/4 cup light margarine
1 cup unsweetened applesauce
1 cup granular sugar substitute
1 egg, or equivalent in egg substitute
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 cup Quaker Quick Oats
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup peanut butter chips
Preheat oven to 350 F. Spray 8 wells of a muffin pan with butter-flavored cooking spray or line with paper liners. In a large bowl, combine margarine, applesauce and sugar substitute. Stir in egg and vanilla extract. Add flour, oats, cocoa powder and baking soda. Mix gently just to combine. Stir in peanut butter chips.
Evenly spoon batter into prepared muffin wells. Bake for 20 to 26 minutes or until a toothpick inserted in center comes out clean. Place muffin pan on a wire rack and let set for 5 minutes. Remove muffins from pan and continue cooling on wire rack. Serves 8.
