Peanut butter enhances sweet potato’s flavor

Sweet Potato vs. Yams — there is a difference. Yams are moister than sweet potatoes and have darker skins. Sweet potatoes are versatile and are often baked, candied or made into pies.

Peanut Butter Sweet Potato Bake

1/2 cup unsweetened orange juice

1/4 cup reduced-fat peanut butter

2 tablespoons Brown Sugar Twin

3 cups (16 ounces) sliced cooked sweet potatoes

1/2 cup miniature marshmallows

Preheat oven to 350 F. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a large bowl, combine orange juice, peanut butter and Brown Sugar Twin. Add sweet potatoes. Mix well to coat. Pour mixture into prepared baking dish. Bake for 20 minutes. Sprinkle marshmallows evenly over top. Continue baking for 5 minutes or until marshmallows start to melt and are lightly browned. Divide into 6 servings.
